Meatloaf with Tomato Relish

Ingredients

  • Tomato Relish:
  • Extra-virgin olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 2 red bell peppers, cored, seeded, and finely diced
  • 2 tomatoes, halved, seeded, and finely diced
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 (12-ounce) bottle ketchup
  • 1 tablespoon Worcestershire sauce
  • Sea salt and freshly ground black pepper

Meatloaf:

  • 3 slices white bread, crusts removed, torn into chunks by hand
  • 1/4 cup whole milk
  • 1 1/2 pounds ground beef
  • 1 pound ground pork
  • 2 eggs
  • Leaves from 2 fresh thyme sprigs
  • Salt and freshly ground black pepper
  • 3 to 4 bacon slices
Directions

Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist! Enjoy it!

  • 1 tablespoon butter 
  • 1/4 cup minced onion 
  • 2 cloves garlic, minced 
  • 1 1/2 teaspoons salt 
  • 1 1/2 teaspoons freshly ground black pepper 
  • 2 pounds extra-lean ground beef 
  • 3 slices bread, toasted and crumbled 
  • 7 buttery round crackers, crushed 
  • 1 egg, lightly beaten 
  • 3 1/2 tablespoons sour cream 
  • 1 1/2 tablespoons Worcestershire sauce 
  • 1 (15 ounce) can tomato sauce, divided 
  • 1/4 cup milk (optional) 
  • 3 tablespoons ketchup

Directions

Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.Enjoy it!

Ingredients

  •  1 1/2 pounds ground beef
  •  3/4 cup fresh bread crumbs
  •  1/2 cup chili sauce
  •  1 egg
  •  1/4 teaspoon salt
  •  1/4 teaspoon freshly ground black pepper
  •   1 cup fresh sliced mushrooms
  •  2 tablespoons minced onion
  •  1 tablespoon butter
  •  1 cup beef broth
  •  2 tablespoons water
  •  1 tablespoon cornstarch


Instruction

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.
Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving.
While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened.Enjoy !

  •  1 egg
  •  1 dash ground black pepper
  •  1 cup soft bread crumbs
  •  1/2 cup milk
  •  1/3 cup steak sauce, (e.g. Heinz 57)
  •  1 onion, chopped
  •  1/2 cup diced green bell pepper


Instruction

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
In a mixing bowl, combine the ground beef, salt, egg, black pepper and bread crumbs. Pour in the milk, 3 tablespoons of the steak sauce, onion and green bell pepper.
Place the mixture into the prepared loaf pan and shape into a loaf. Brush the top with the remaining steak sauce.
Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing. Enjoy !
